Caramelized Onion Dip
Ingredients:
2 tablespoons butter
2 medium onions, thinly sliced
¼ teaspoon salt
¼ teaspoon fresh ground black pepper
4 ounces cream cheese, softened
1 ¼ cups sour cream
3 green onions, chopped
In a large skillet, melt the butter over medium-low heat. Add the sliced onions and cook for 30-35 minutes, stirring occasionally, until they turn a deep golden brown color. Remove from the heat and let cool.
In a large mixing bowl, whip the cream cheese until creamy, using a hand mixer. Add the sour cream, salt and black pepper.
Chop the caramelized onions (by hand or in a food processor). Fold in the caramelized onions and chopped green onions into the dip.
Serve with your favorite chips or veggies.
The dip can be made ahead and will last for several days, stored in the refrigerator.
